Quando ancora eravamo tutti nomadi, prima dell\u2019invenzione delle citt\u00e0, le donne macinavano alcuni semi, vi aggiungevano acqua, quando c\u2019era anche un po\u2019 di sale e mettevano a cuocere l\u2019impasto sulle pietre roventi. Ne risultava un ottimo cibo, nutriente e di lunga durata, ideale per chi cacciava e faceva lunghi viaggi. Per queste sue qualit\u00e0 \u00e8 passato alle societ\u00e0 agro-pastorali e a chi faceva mestieri non sedentari. Se lo portavano dietro pellegrini,  pastori, boscaioli, carrettieri, mercanti. Un cibo primario, un pane da lavoro e da viaggio economico, semplice, nutriente, di lunga durata. Queste qualit\u00e0 l\u2019hanno fatto diventare oggi una valida soluzione alimentare per il prossimo futuro e un elemento di studio per risolvere problemi alimentari dei popoli di tutto il mondo. In Italia ne esistono  molte varianti: Piadina, Panigacci, Pizza scima, Lestopita, Pane carasau, Frisella e tanti altri.<br>\nNe abbiamo scelti quattro, in rappresentanza di tutto il territorio italiano, dal nord al sud, e attraverso video appositamente realizzati, vi facciamo vedere come si fanno, che caratteristiche hanno e la maniera migliore per usarli. Vengono preparati con farina di grano, acqua e sale. L\u2019impasto piuttosto fluido viene versato in dischetti di terracotta chiamati testi, prima scaldati sul fuoco. I testi con l\u2019impasto vengono poi sistemati l\u2019uno sull\u2019altro in modo da ottenere una cottura simile a quella al forno.
